Whole Wheat Bean Wrap

Indian roti is a divine 100 percent whole wheat flatbread--chewy, soft, rich-flavored. It's even good for you! And in Wichita, there were only two ways to get it--make it or make friends with an Indian cook. Now, though, the Asian Groceries store on the southwest corner of 21st and Woodlawn (same mall as Da Cajun Shack) has wonderful whole wheat tortillas. Buy them on Fridays, and they're so fresh the bag is steamed over.

They're good with fajitas and with all Indian dishes. And why not mix them up with a Lebanese bean dish, and make wraps? In honor of Raks al-Dounya's first anniversary tomorrow, I'm reprinting a recipe for "New Hummus." Roll it up! If you want, add cucumbers, scallions, fresh parsley, feta cheese, and/or little bits of tomato. The concept of "new hummus" is from Elias Bounajem and the Lebanese community, but the recipe details are adapted from Feast from the Mideast: 250 Sun-Drenched Dishes from the Lands of the Bible, by Faye Levy. It's a recommended read. Enjoy!

New Hummus:
15 oz. can fava beans (or chick peas), drained and liquid reserved
15 oz. can chick peas, drained and liquid reserved
1/2 tsp. ground cumin
2 garlic cloves, minced
2-3 Tbsp. extra-virgin olive oil
2-3 Tbsp. lemon juice
salt and pepper
Coarsely mash beans with a fork, or pulse in a food processor. Stir in cumin and garlic. Add olive oil, lemon juice, salt and pepper to taste. If it's too dry, add a little liquid from the canned beans, 1 Tbsp. at a time.
